Fall Harvest Supper

Ingredients:

- 1 1/3 pounds (4 medium) potatoes, peeled and cut into 1-inch cubes
- 1 tablespoon vegetable oil
- 1 cup coarsely chopped onion
- 12 ounces fully cooked chicken sausages, cut into 1/2-inch thick slices
- 2 small apples, cored and cut into ½-inch thick wedges
- ½ cup water
- 2 tablespoons coarse-grained Dijon-style mustard
- 1 cup lowfat milk
- Salt and pepper
- 4 parsley sprigs (optional)
